Kattila Tartare

Ingredients
- 500g beef sirloin steak or deer filet
- 5 cl Kattila Gin
- 3 tsp Salt
- Black Pepper
- 3 tsp sugar
- 3 tsp fresh thyme leaves
- 10 quial egg yolks or chicken egg yolks
On the side
- 1 dl Mayonase
- 2 tbs Sieved lingonberry jam
- 1 tsp Dijon mustard
- Garlic
- Kale
Steps
- Remove membranes of the meat and chop it fine or mince coarse
- Put the meat and spices into a bowl
- Mix well and place the bowl into fridge for an hour
- Mix again after an hour and taste the salt but don't add it yet
- Grind pepper and mix
- Form about 50g pile of meat and make a pothole on top
- Place yolk of quial egg or part of chicken egg yolk on the pothole with a teaespoon
- Sprinkle finger salt and pepper on top
- Put it in the fridge
- Roast the kale and sliced garlic
- Place on the side of the tartare a tablespoon of mayonase
- Sprinkle chopped kale on top
