Marinated Akvavit Peppers

Ingredients

  • 6 bell peppers (different colors)
  • 3 dl olive oil\n* 60 ml Kattila Akvavit
  • 2 tsp salt
  • 1 tsp honey or sugar
  • fresh thyme
  • 1/2 chopped garlig clove
  • 1/2 tsp  ground black pepper

Steps

  1. Slice the bell peppers and put them into the oven skin side up
  2. Roast the pepper skins black with oven grill
  3. Put the peppers in a plastic bag for awhile and peel them
  4. Mix all the marinade incredients except thyme
  5. Place the pepper slices into a glass jar and place a thyme branch between the layers
  6. Pour the marinade over the peppers, close the jar and shake lightly
  7. Put the jar in a fridge for 24h
  8. If you for some reason don't eat all of them at once, the marinated peppers will stay good in the fridge. You can use the marinade oil for frying
